Vanilla Fudge 1 tin of condensed milk.
2 lb/800g of caster sugar.
2oz/50g of butter.
2 tablespoons golden syrup.
1 desert spoon of lemon juice.

Method Put the milk and sugar into a saucepan and stir over a gentle heat until the sugar is dissolved.
Boil to 120degC, stirring all the time.
Add the butter, golden syrup and lemon juice ad mix until it thickens lightly.
Pour into a greased tin and mark into shape before it sets.
When cold cut into pieces.
NOTE! THIS MUST BE MONITORED CAREFULLY AND COOKED ON A VERY LOW HEAT OR IT WILL SPOIL SO PATIENCE IS ESSENTIAL.
